Is there any speculation about what Shanahan will say at noon?

There's no announcement or anything like that. He'll likely just make general statements about the direction of the franchise and then take questions from the media.

Seems a bit odd after Nonis already spoke about the Carlyle firing, but ok.
I'm wondering if Nonis is gone, though that probably wouldn't be announced in a press conference, right?

We'd hear about it before the actual press conference, yeah.
This is pretty much just because the media has complained about now seeing Shanny in awhile. So the Leafs just want to shut them up about that.

Shanahan has fired & replaced virtually the entire Leafs front office over the past several months and there were ZERO questions about that

From what I can tell, these are the current people in the position of President of Hockey Operations:
Cam Neely in Boston, Burke in Calgary, John Davidson in Columbus, Lowe in Edmonton, Paul Holmgren in Philly, Linden in Vancouver, and of course Shanny.
The above are the teams with a President and a GM. Some teams have a GM who also holds the President title.

I'm 100% sure those issues are massively overstated. I've seen him do all of those things as recently as the Leafs game against Washington. He may not excel at them, but, he's not "afraid" to do them, like some people like to believe. Also, what's the sense in going into the corners, battling for pucks and taking hits when your line mates - and especially your centre - aren't willing to? You're not actually going to accomplish anything other than getting caught behind the play.
